Butternut Squash Frittata



A flavorful frittata with the sweetness of butternut squash, the crunch of bell peppers, and the richness of cheddar cheese.

Ingredients:

  • 2 cups butternut squash, diced
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1/2 cup red bell pepper, diced
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions:

Preheat your oven to 375F 190C

In a large ovenproof skillet, heat the olive oil over medium heat

Add the diced butternut squash and saut for 5-7 minutes until it starts to soften

Stir in the diced onion and red bell pepper and continue to cook for another 3-4 minutes until the vegetables are tender

In a bowl, whisk together the eggs, milk, shredded cheddar cheese, salt, and pepper

Pour the egg mixture evenly over the sauted vegetables in the skillet

Let the frittata cook on the stovetop for 2-3 minutes without stirring to set the edges

Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is set and slightly golden on top

Remove the frittata from the oven and garnish with fresh parsley

Slice and serve hot
