Crack Chicken and Dumplings is a great new take on a classic comfort food. This dish is creamy, cheesy, and totally delicious. It combines the savory tastes of crack chicken with the heartiness of dumplings.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1 cup frozen peas and carrots
- 1 can refrigerated biscuit dough
- Salt and pepper to taste
Instructions:
In a large pot, heat olive oil over medium heat
Add diced chicken and cook until browned
Add diced onion and minced garlic, saut until softened
Pour in chicken broth and heavy cream, bring to a simmer
Stir in shredded cheddar cheese until melted
Add crumbled bacon and frozen peas and carrots
Season with salt and pepper to taste
Cut biscuit dough into small pieces and drop into the simmering broth
Cover and simmer for 10-15 minutes until dumplings are cooked through and fluffy
Serve hot, garnished with additional shredded cheese and bacon if desired
