A flavorful and hearty Chili Verde made effortlessly in a pressure cooker. Tender pork, tomatillos, and peppers come together with spices for a delicious meal.
Ingredients:
- 2 lbs pork shoulder, diced
- 1 cup chicken broth
- 1 lb tomatillos, husked and quartered
- 2 poblano peppers, seeded and chopped
- 2 jalapeo peppers, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 bunch cilantro, chopped
- Juice of 2 limes
Instructions:
Season diced pork with salt, pepper, cumin, and oregano
Set the pressure cooker to 'Saut' and brown the pork on all sides
Add chicken broth, tomatillos, poblano peppers, jalapeo peppers, onion, and garlic to the pressure cooker
Secure the lid, set to 'Manual' for 20 minutes at high pressure
Once done, quick-release pressure and open the lid
Stir in cilantro and lime juice
Adjust seasoning if needed
Serve the Chili Verde hot with your favorite toppings
