This quinoa spaghetti dish is a fresh and flavorful take on traditional pasta, featuring tender broccoli rabe, tangy feta cheese, and refreshing mint. It's a quick and easy recipe that's perfect for a satisfying weeknight dinner.
Ingredients:
- 8 ounces quinoa spaghetti
- 1 bunch broccoli rabe, trimmed and chopped
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt to taste
- 4 ounces feta cheese, crumbled
- 2 tablespoons fresh mint leaves, chopped
- Lemon zest, for garnish
Instructions:
Follow the directions on the package to cook the quinoa spaghetti until it is al dente
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
Add the red pepper flakes and minced garlic
Cook for about one minute, until the garlic smells good
Salt the broccoli rabe and add it to the pan
Cook for about 5 to 7 minutes, or until it's soft
Mix the broccoli rabe and cooked quinoa spaghetti together in the skillet until everything is well mixed
Put the broccoli rabe and spaghetti on plates to serve
Shred some feta cheese and chop up some mint leaves to put on top
