These vegan burgers are packed with flavor from the jerk seasoning and sweet potato. They're perfect for a hearty and satisfying meal.
Ingredients:
- 1 large sweet potato, peeled and diced
- 1 can 15 oz black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 2 tablespoons jerk seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions:
Preheat oven to 400F 200C
Place sweet potato in a pot of boiling water and cook until tender, about 10 minutes
Drain and mash in a large bowl
Add black beans, breadcrumbs, jerk seasoning, salt, and pepper to the mashed sweet potato
Mix until well combined
Divide the mixture into 4 equal parts and shape into burger patties
Heat olive oil in a skillet over medium heat
Cook the patties until golden brown, about 4-5 minutes per side
Alternatively, bake the patties on a lined baking sheet for 15-20 minutes, flipping halfway through
