Quinoa Pancakes



These gluten-free, high-protein quinoa pancakes are both tasty and good for you. A great way to start the day with a healthy breakfast.

Ingredients:

  • 1 cup quinoa, rinsed and cooked
  • 1 ripe banana, mashed
  • 2 eggs
  • 1/4 cup milk dairy or plant-based
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Maple syrup and fresh fruits for topping

Instructions:

In a blender, combine cooked quinoa, mashed banana, eggs, milk, baking powder, vanilla extract, and salt

Blend until smooth batter forms

Heat a griddle or non-stick skillet over medium heat

Pour 1/4 cup of batter onto the griddle for each pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Repeat with the remaining batter

Serve the quinoa pancakes with maple syrup and fresh fruits on top
